A traditional chilli variety from Mexico which is enjoying great popularity again today. The dark flesh has a strong flavour of its own. Rather tart, almost earthy, this chilli is traditionally used for mole and other sauces. When dried, the chilli huacle develops almost smoky flavours or tastes extremely good when grilled. Also one of my favourites.
